Khand /Crystal Sugar is made by extracting and processing sugar juice from sugar cane and then evaporating until crystallisation occurs. All forms of sugar are produced in the same initial process, and given different forms like crystal or powdered through processes of cleaning, crystallisation and changing the levels of molasses. India is the largest producer and consumer of Khand. Khand contains higher levels of various minerals than processed white sugar. It is produced in most of the countries where the sugarcane is cultivated majorly like is India, Colombia, Myanmar, Pakistan, Brazil, Bangladesh and China.
Cooking and use:
Khand crystals are used as a sweetener in hot beverages and in food and confectionery. It can be used in most recipes by slightly reducing the liquid content of the recipe as a substitution to brown sugar. Traditionally it is used in making sweets, kheer, gur or khand chawal (sweetened rice) or laddu. It is often used to sweeten coffee and other recipes of tea particularly masala chai. It can be kept in high temperatures and has a reasonably long shelf life.
Health benefits of Khand:
- For instant energy, in the blood sugar is converted into glucose, which is the simplest form of sugar. The cells then absorb glucose and transmit energy.
- Functioning of brain: brain cannot function without sugar. A black out situation arises when the sugar supply to the brain stops.
- Helpful against depression: Sugar helps to cure depression effectively. Chocolate containing sugar helps to make the mood feel good.
- Good for people with low blood pressure. It increases the blood pressure hence it’s advisable to consume it to prevent fits.
- Improving the skin glow as it can be used as a natural scrub to eliminate dead skin cells. Sugar contains AHA or alpha hydroxy acid, which is an excellent exfoliator.
