Poppy seeds, also known as khaskhas (or khus khus) are a type of oilseed and are derived from the Pepewar somniferum plant. It is also known as Posto traditionally in the eastern regions of India. It is being cultivated since more than 3000 years. Along with India, Turkey and many other European countries produce it commercially. These are fine and small white-beige seeds. It also provides relief from many health problems. White poppy seeds, also called Indian or Asian poppy.  It is used in most dishes. It is used in many ways to make regional dishes. Apart from this, oil is also extracted from its seeds.

Cooking and use:

Soaked poppy seeds are often used to thicken gravy with other spices. Blue poppy - also called European poppy,   are mostly seen in bread and confectionery (sweet and chocolate). Toasted poppy seeds can be used for garnishing bread, rolls, vegetables, and salads. In Ayurveda, it has been described as a food that reduces body heat. White poppy seeds are grinded and used for dishes such as aloo posto and posto Boda, etc.   in West Bengal and Bangladesh.  In addition, the poppy is also used to make pastries.  While purchasing one should consider the seeds should be small and light, for genuinity. Poppy seeds are stored in an airtight container in a cool, dry and dark place.  And can be stored for 6 months if kept away from moisture.
