Sprouted matki refers to whole matki beans, which have been sprouted. Matki or moth bean is a small, brown-coloured, oblong-shaped bean, which is very common in Indian cuisine. In order to sprout the matki, first it has to be sorted to remove stones, washed, and then soaked in water for 6-8 hours
