Matki

Matki is a rice and lentil based vegan product that is traditionally consumed in the Indian subcontinent. It is traditionally made by boiling rice and lentils together and adding a variety of spices to the mixture. The product is then cooked until the water is absorbed. It is usually eaten with dal, a lentil soup, as well as a variety of other vegetables.
