Gir Cow Ghee
Nothing makes our dish more complete and content as much as a spoon full of pure ghee poured over our food. From rice to chapatis and sweets to khakraas, ghee blends with everything and enhances its taste. Not only for its aroma but there is a reason why it is a part of our diet from ages. Greatest aroma coupled with tonnes of health benefits is what makes ghee one of the best addons in our daily food routine.
Taste, aroma & health benefits can only be achieved through an ethical production process. At Shuddi, we have ensured that there is not a single additive from start to finish of the ghee making process. Our desi ghee is made from the milk that is sourced from single gau shala, tested, and produced by 100% organic farms. The cows are fed with only natural grass, herbs, and grains to ensure the highest quality of milk. This is then processed into ghee using the traditional Vedic process(bilona method) as described in Ayurveda to retain all the nutrients.
Every desi cow ghee is considered a healthier alternative to regular jersey cow ghee as the primary ingredient of A2 ghee, A2 cow milk, does not contain a type of β-casein protein called the A1 protein. This protein is considered detrimental to the body and has more negative effects on the lactose intolerant. This ghee is also known as the most nutrition-dense variant for all age groups.
Process of Making Gir Cow A2 Ghee:-
Step 1 : The fresh A2 milk from desi Gir cows is obtained from the cows that are fed natural fodder and are also left to graze freely in the fields.
The first share is always for the calf!
Step 2 : The remaining milk is boiled and set to curd.
Step 3: The curd is then hand churned to yield the yummy butter. This step ensures that all the nutrients are retained.
Step 4: The butter is heated on natural wood-fired using copper and stainless steel utensils. The butter is heated on a low flame to yield golden color ghee.
We follow the ancient tradition where if any cow gives birth to a calf, we do not use its milk for 15 days, which makes our Ghee suitable for Holy Rituals. The cows are fed with green grass and leys in the scheduled diet. The diet comprises various grass-like corn, jwar, bajra, mkka, groundnut crushing and other green grasses. This ensures that our holy cows are not just drained for milk but fed well to maintain its disease free health.
Around 26-28 liters of Gir cows milk gives 1 liter of ghee! So anything cheaper has something to be checked for. Make a wise choice!
