Meethi Seviyaan
Meethi seviyaan, a simple yet delicious milk pudding, is a must at every Eid celebration. Made with roasted vermicelli, ghee, cardamom and dried fruit, this recipe is bound to bring a smile to the face of anyone who devours it!
Ingredients you’ll need
- 3 cups milk
- 1 cup vermicelli
- 1 tsp Farm to Fellas desi ghee
- 1 – 1.5 cups Farm to Fellas jaggery (powdered, can be altered according to taste preferences)
- ½ tsp cardamom powder
- Chopped nuts for garnish
Procedure
- Roast vermicelli in some ghee and set aside.
- To a heavy bottomed pan, pour in milk and place it on a medium-low flame, stirring continuously till the milk is reduced by 1/3rd
- Add in the roasted vermicelli to the reduced milk and continue to cook for 5-10 minutes till it softens.
- Add in the jaggery powder and stir to dissolve. Add in 1 cup first and taste to see if you need any more sweetness.
- Sprinkle cardamom powder and allow the seviyaan to thicken for a while, stirring occasionally.
- Finally, garnish with chopped nuts, saffron strands and serve warm!
